Guest guest Posted August 31, 2005 Report Share Posted August 31, 2005 My son has an electric wok, and it is the worst! It doesn't heat up near as well as my metal one. I don't know if it's just HIS wok, or if this is indicative of ALL electric woks. I've had my metal wok for...geeze, maybe 25 years? It is still wonderful! In the earlier days, I'd make a stir-fry, and my husband would laboriously scrub the wok clean. One day we were watching some sort of TV program that explained how to season the wok, with the anticipated result being a layer of carbonized material that cooked with just a bit of oil and only needed a light, soapless cleaning. Boy, was that an epiphany! Chef's Catalog is a terrific place to shop. Yes, some of the stuff is pricey, but there's always plenty of closeout sales. Lots of times they will offer free shipping for orders over $99, or like the one I received yesterday, free shipping with 3 items. Time to start holiday shopping! There is the mailed catalog, and the online, with emailed offers. Use both. And they are a good company. A couple of years ago, I bought a food processor. Within a few months, one of the blades had a spot of rust. I called them and was immediately mailed a replacement. I'm glad my mention of eggcreams blossomed! Yes, I think eggcreams are regional. When I lived in New Jersey, we had the eggcreams and flavored sodas, like chocolate, vanilla, cherry, etc. This was in the days of real soda fountains (guess I'm showing my age!). The sodas were flavor of choice + carbonated water. When I moved to Ohio, I found out these were called " phosphates " and no one knew of an eggcream. Of course, now it's hard to find any place that actually has a fountain anymore to make these drinks. See's Candy? Uh, oh...going into withdrawal! I read an interesting description of how soda jerks made egg creams, it was fun!! Wonder what else they are called. Then there is also the " pop " thing...my grandmother called it tonic, dh calls it soda (NJ boy). I have lived in Connecticut for 14 years where people drink soda and stand on line.
