Guest guest Posted September 3, 2005 Report Share Posted September 3, 2005 hi shawn, i'm so happy you liked the soup! yes, it's a thai soup. kaffir lime leaves are amazing huh? i love them! i am not able to find them often. they freeze well, so anytime i'm out of town and happen to run across some, i buy them and freeze them. i bet you could freeze the galanga too (if you find it...i still haven't been able to find it)...ginger freezes well and since they are related...... did you put rice noodles in your soup? i'm really pleased you like the soup. i'm gonna have to make it soon because you got me craving it. thanks for the review. susie --- subprong <subprong wrote: > Oh sweet Susie, you chile goddess you. Yes, indeedy, the lime leaves are " awesome " . I recommend everyone here at the group try them. They are very potent though and so is the galanga - so just use a bit (if you aren't into it as much as I am). They really do have that Thai distinction. Great to know. They are still good to go. The Thai basil....not so much. Browned within days of getting it. did you put rice noodles in your soup? I did not put the rice noodles in. This was just the maters, shrooms, tofu (i've never like tofu more than with this soup) and other bits. It was very brothy and I love very brothy soups. I've only read recipes with them in, never been able to try one! :-) I will check at the Asian shop - I just found one called 99 Ranch. Based on the website it looks huge.
