" Arroz a la Peruana " Peruvian Rice 4 cups rice 1/3-1/2 cup canola oil 1 heaping tsp. minced garlic 8 cups of water 2 tsp. butter 1/4 cup chopped onion 3 cups fresh corn kernels cooked (I used white corn) salt to taste Heat oil in large saucepan over medium heat and saute garlic and onion for about 3 mins until cooked but not brown. Add rice and saute rice with onions and garlic for 2 minutes. Add water and salt and bring to a boil. Lower heat to a simmer, cover and cook about 15 mins. until rice is done. Remove from heat and stir in the corn and butter, fluff. Ready to serve.
