Calabacitas in the Crockpot vegan recipe post

This is very veratile. I use this as a taco filling, side dish, in lasagna roll

ups, stuff into pita bread or even in enchiladas.

 

 

" Calabacitas in the Crockpot "

 

2 med. zucchinis cut into 3/4 inch pieces.

1 16 oz. can stewed tomatoes with juice

1 small onion chopped

1 cup cooked whole kernal corn

1 4 oz. can of roasted green Ortega chiles, chopped

1 tsp. dried oregano

1/2 tsp. sugar (optional)

salt & pepper to taste (when done cooking)

 

Combine all ingredients in crockpot. Cover and cook on high for 2-3 hrs or

until zucchini is tender. Season with salt and pepper.
