Cold and Creamy Avocado Soup - Vegan

I tried this yesterday. It was delicious and didn't want to share with hubby.

But I did. . . We love avocados.

 

Cold and Creamy Avocado Soup

 

1 ripe avocado

1/4 cup lime juice ( I used 1 fresh lime, squeezed)

2 cups soy milk (Mom has indicated milk, but I used Soy)

1 - 3 teaspoons chili powder

1 teaspoon salt

6 ice cubes

1 small tomato, cored and diced

1/4 cup diced red onion

 

Peel and pit the avocado and cut it into large chunks. Place the avocado and

lime juice in a blender and puree. Add the milk, chili powder, salt and ice

cubes. Whirl until smooth. Transfer to chilled serving bowls or cold mugs and

sprinkle the tomato and onion over the top. Serves 4.

 

I didn't have any tomato yesterday so I omitted them.

 

I would like to make it next time with a bit of cilantro.

 

Any other ideas?

This sounds really yummy, Jenn! i bet cilantro

would be a great addition. As far as suggestions,

maybe some more spice. i like a little heat....

[nothing to the degree Shawn and Susie can handle

though!] *lol*

LOL - Jenn, can't blame you for not wanting to share with your hubby. :)

 

This sounds good. Now, does the pureeing leave any remnants of ice bits or

does it become silky (bad soy milk pun :) smooth?

 

I love avocados - so so good.

 

I think cilantro would be a great idea. I wonder if stirring it in at the

end might be better so that there is a hint of cilantro and it doesn't

overpower the subtle avocado flavor. I think a nice thing to do would be to

make some fresh pico de gallo (chopped up tomato, onion, cilantro,

jalapenos, garlic and lime) and plop a big spoonful in the middle after

pouring the soup into the bowl. That way you can scoop up a little of the

fresh pico along with the soup. Or maybe some green onion as a garnish too.

 

Thanks for this recipe. I always have these ingredients on hand and this

looks good, simple and quick. Nice combo! I'm saving it.

Thanks for the ideas for the soup. I agree about the cilantro at the end. I

also liked the idea of the fresh pico de gallo. We have family coming this

weekend and will try your ideas :)
