Top it off, my mother is coming to visit for 10 days on the 20th of this month! Eek! *lol* i didn't realise the Arrohead Mills pancake mix was vegan-friendly. That is so cool and great info. i am going to buy some! Your red beans and rice tortillas with fresh corn salsa sounds so delicious. i bet the family loved them. And that lasagne... to die for! Mmmmm Like Shawn, i too want to know more about what goes into a tofu megabomb sandwich. i love that yum-yum cake recipe. I was thinking about making some from scratch, but the mix saved me from having to go farther for a bulk foods section at another store - and I wasn't sure if the Queen Anne Thriftway in Tacoma's Proctor district would have all the ingredients I would have needed. It's more work being a vegan in Tacoma than here in Ashland. And costs more, too. To make that like a lasagna dish, I took a bus over to Marlene's near the Tacoma Mall, and they didn't have the tahini in those plastic tubs any more, and had to buy a pint jar of Maranatha's for nearly $5. Adding the bus fare, it cost twice as much as it would here from the co-op's bulk section which is walking distance. I have it so good here, I've gotten spoiled somewhat. Anyway, not all Arrowhead Mills pancake mixes are vegan, but they used to have at least one other that was, and it was wheatless too. I just used applesauce as an egg replacer, and that worked just fine... I posted more on the megabomb. It should be findable downthread from Shawn's post... Mothers: love them, but hard to live with them sometimes. Where is yours coming from? Has she seen all the local tourist sites? I think I wanna move to Ashland!! There is no tahini in Big Spring, Texas - not in either of the 2 grocerys, Bargain Mart, or our one little health food store!! so I bought sesame seeds and will make my own - or just use the seeds instead of tahini!
