carrot-raisin waffles recipe post vegan

I got my vegetarian times yesterday and modified this recipe to be vegan. They

were super yummy for breakfast and helped my stress headache.

 

1 cup Whole Wheat pastry flour

1/2 cup buckwheat flour

3 Tbs. brown sugar

1 1/2 tsp. baking powder

1 tsp. baking soda

2 tsp. cinnamon

1/4 cup unsweetened applesauce

1 cup soymilk

3/4 cup finely grated carrots

1/2 cup raisins

 

1. ligtly coat waffle iron with cooking spray and preheat.

2. Mix dry ingredients

3. Mix wet ingredients and stir into dry mixture. Fold in carrots and raisins.

4. Laddle in 1/2 cup mixture (or whatever you iron tells you to use) and cook 4

minutes.

 

If you aren't serving right away keep them warm in a preheated 200F oven.

that's awesome! my own VT is sitting open to that exact page.. hubby

do you find carrots help your head??

I'm experimenting with this myself.. I know that carrots DO raise the

serotonin level of the brain... so I've been eating or juicing carrots

when I feel the need ! =)

glad you feel better!

 

I'll just tell hubby I NEED a waffle iron... to help my head! LOL

Carrots and bananas are foods that help with stress headaches...haven't found a

migraine helper...although if I could get down food with one that would help :D

These sound super healthy and delicious.

Sorry you had a stress headache, and i am

glad these helped it!

i don't have a waffle iron and have never made

waffles. i need to add one to my xmas list and

hope Santa thinks i have been good this year. ;)

now that you mention it.. I had a headache yesterday.. ate a bunch of

carrots, and carrot cake, and had a banana smoothy.. hmmm...

must be a connection!

if you CAN Drink when you have a migraine.. carrot juice can be helpful!
