They were super yummy for breakfast and helped my stress headache. 1 cup Whole Wheat pastry flour 1/2 cup buckwheat flour 3 Tbs. brown sugar 1 1/2 tsp. baking powder 1 tsp. baking soda 2 tsp. cinnamon 1/4 cup unsweetened applesauce 1 cup soymilk 3/4 cup finely grated carrots 1/2 cup raisins 1. ligtly coat waffle iron with cooking spray and preheat. 2. Mix dry ingredients 3. Mix wet ingredients and stir into dry mixture. Fold in carrots and raisins. 4. Laddle in 1/2 cup mixture (or whatever you iron tells you to use) and cook 4 minutes. I told him, we need a waffle iron! lol do you find carrots help your head?? I'm experimenting with this myself.. I know that carrots DO raise the serotonin level of the brain... so I've been eating or juicing carrots when I feel the need ! =) glad you feel better! I'll just tell hubby I NEED a waffle iron... to help my head!
