I'm not vegan, > just curious. I usually just use my regular pancake mix in the waffle iron! I make my own; it's not in the files but I don't have my cookbooks back yet so I can't post it right now. Often I make it with Ener-G egg replacer powder, so when I want to make pancakes or waffles all I need to add is the soymilk (I make a huge batch of the dry mix and store it in the freezer).
