Guest guest Posted September 12, 2005 Report Share Posted September 12, 2005 This is a great gift idea for a friend or co-worker, and a wonderful way to share the concept of easy vegetarian cooking goodness. My kids and i like to do these as gift projects after Thanksgiving, so that we have gifts on-hand to give to neighbors, teacher, etc. Print up a recipe card on holiday paper and tie it around a jar with raffia. We also put a square of fabric on the jar to jazz up the presentation. Be sure to list the additional grocery items/ingredients they will need to make the soup, or toss a package of Yves Veggie ground and can of tomatoes in a basket with the soup mix and wooden spoon for a nice complete gourmet gift basket. Friendship Soup Mix 1/2 cup dry split peas 1/3 cup vegetarian " beef-flavored " bouillon 1/4 cup pearl barley 1/2 cup dry lentils 1/4 cup dried minced onion 1/2 tsp. garlic granules 2 tsp. Italian seasoning 1/2 cup long grain rice 1/2 cup alphabet macaroni o other small pasta ~ Additional Ingredients ~ 1 package veggie ground [i give Yves ] 3 quarts water 1 can [28 oz.] diced tomatoes, undrained In a 1/2-pint jar, layer the first nine ingredients in order listed; i put the pasta in a small sandwich bag so it is easy for the person to reserve due to the cooking instructions. Seal tightly. Yield: one batch To Prepare Soup: Carefully remove the pasta from the top of jar and set aside. In a large sauce pan or Dutch oven, add water, canned tomatoes, veggie ground, and soup mix; bring to a boil. Reduce heat; cover and simmer for one hour. Add reserved pasta; cover and simmer for 20 minutes or until pasta, split peas, lentils, and barley are tender. This'll be good for friend who are ill also! I love the idea. Let me ask you what you think of making it without the fake ground...I find that some non veggie people can't stand the stuff. And, I've not seen fake beef boullion, but do know where to get fake chicken boullion. Do you think it would be good with " chicken " and no ground??
