The tricky thing: There are two Unbeef broth recipes in there. The one you gave is for flavoring other foods, but not the more concentrated broth for flavoring seitan, tofu or tvp to be like " beef. " Here is the other: Unbeef for flavoring seitan, tofu and tvp Cook 2 cups of raw gluten (or tofu or tvp) in: 1/4 C. Soy Sauce 2 tsp. Kitchen Bouquet 2 T. Nutritional Yeast 1/2 C. Onions, chopped 1/4 tsp. Sage 1 tsp. Corn oil 2 C. Water Combine everything and simmer for 5 minutes. I'll have to post other things out of the book tomorrow. I'm limited by library hours at the moment, and it closes in just a few minutes at 7pm....
