Guest guest
Pumpkin Cookies I made these easy cookies this morning and I really like them (my husband and son did not). They are soft and lighter than most cookies. They go perfectly with hot coffee or chai tea. I left out the raisins this time. Next time I might add chocolate or white chocolate chips. These cookies freeze well. Vegan too. ½ cup shortening 1 cup canned pumpkin 1 teaspoon baking soda 1 teaspoon vanilla 1 cup sugar 1 cup raisins 2 cups flour 1 teaspoon baking powder 1 teaspoon cinnamon Cream shortening and sugar and add pumpkin and raisins. Sift dry ingredients and add to above mixture. Drop by spoon on greased cookie sheet. Bake in 350 degree oven for 12-15 minutes. May frost if desired. Guest guest
What didn't the lads like about those cookies? They sound wonderful. i will have to try this recipe. My daughter baked up a lemon pound cake today and mixed up too much vanilla icing, so i bet that would go perfectly on these. ~ pt ~ In the time we have it is surely our duty to do all the good we can to all the people we can in all the ways we can. ~ William Barclay ~~~*~~~*~~~*~~~> , " artichoke72x " < artichoke72x> wrote: > > Pumpkin Cookies > > I made these easy cookies this morning and I really > like them (my husband and son did not). Guest guest
I've noticed that about pumpkin concoctions, i.e., that they are always fluffy or ultra-moist. How would one go about making *crispy* pumpkin cookies? Guest guest
Good question, Erin. Maybe by adding a little pumpkin to a rolled sugar cookie dough to replace a bit of the liquid in that recipe? Then bake them crisp... ~ pt ~ Don't get upset at the wind.Ê Re-set your sails. ~ Narmeen Mitha ~~~*~~~*~~~*~~~> , " cronzen " <truepatriot@m...> wrote: > > I've noticed that about pumpkin concoctions, > i.e., that they are always fluffy or ultra-moist. > > How would one go about making *crispy* pumpkin cookies? > > > Thanks, > -Erin
