Happy Halloween! What's for dinner?

Just wanted to wish everyone that celebrates

a very Happy [and safe] Halloween.

 

We are going to have soft-flour tacos made with

Bob's Red Mill TVP that i reconstituted with

veggie broth and a homemade taco spice packet.

Guacamole, chopped tomatoes, shredded lettuce,

shredded cheese, salsa, sour cream, black olives,

and refried beans for sides.

Both kids have different places they wish to go to

celebrate the evening, so i am on taxi duty.

Thought this quick grab meal would fit the bill.

Made the pumpkin cookies Susie posted a recipe

for. Mmmmmm

Oops! I tried to respond and got bounced off the

internet. LOL! We just got in from trick-or-treating,

and we had a great time. My son got a huge amount of

candy, but he just picked out the types that are his

favorites and then said he'd give the rest to his

Daddy. :-D

 

I'm waiting until the doorbell stops ringing (maybe 9

or 9:30pm?) and I'll make myself a BLT. I've been

craving one tonight. :-D

I made pumpkin soup and cornbread muffins.

Yum. The pumpkin soup was vegan, and I don't have a recipe, I just

winged it! Perfect Halloween fare!

Then we dressed my dd up in her pumpkin outfit (there seems to be a

pumpkin theme!) and put her in the wagon and walked Johnson Street, the

street in my town that REALLY decorates and where all the kiddos go to

trick or treat. We just walked, were spectators.

Anyway, hope everyone else had fun!
