They are very good for the liver and eyes since they have lots of minerals and Vitamin A. GB Hi Guru parsnips Will carrots do the same thing? I think I can make a wonderful creation with them. Just the right amount of freshly ground cardamom and nutmeg will do it. My celestial wheels are rolling now. I am only used to Parsnips in soups or made lake a beef .... sounds great with ground cardamom and nutmeg - i need to try that out...
