Marinated Broccoli Matchsticks

 

I got the 5 1/2 cups of broccoli stalks from 2 medium broccoli heads. I usually

just save the stalks for soups or stews or veggie stock, but now i have another

way of using them.

 

5 1/2 cups julienne-cut broccoli stalk, 2 x 1/4-inch

2 1/2 cups diced seeded tomato

2 tablespoons lemon juice

2 teaspoons olive oil

1/2 teaspoon salt

1/8 teaspoon pepper

2 garlic cloves, crushed

1/4 cup grated fresh parmesan cheese

 

Combine broccoli and tomato in a bowl; toss well, and set aside.

Combine lemon juice and next 4 ingredients in a blender, and process until

smooth.

Pour over the broccoli mixture, and toss well. Cover and marinate in

refrigerator for 1 hour. Sprinkle with cheese.

I like the looks of this recipe. I usually peal the stalks and cook

them with the tops. In your recipe do you you peal the stalks before

julienne cuting them?Deanna-- In

I think this would be good in the broccoli slaw that you can get

pre-packaged and already match-sticked??
