Guest guest Posted June 16, 2006 Report Share Posted June 16, 2006 Here is a muffin recipe I enjoy making on the weekends. I was going to make them this morning, but discovered I am low on flour! Can't you believe it? *lol* Guess if I want a fresh muffin I have to get myself downtown to the outdoor farmer's market.... sounds like a plan. Honey Muffins 2 cups flour 1/4 cup sugar 2 tsp baking pwdr 1 tsp baking soda 1/2 tsp salt 2 eggs 1/2 cup honey 1/2 cup orange juice 1/3 cup melted butter or margarine 1 tsp vanilla extract In a large bowl, combine flour, sugar, baking powder, baking soda and salt; set aside. In a mixing bowl, beat eggs. Add honey, orange juice, butter, vanilla; mix well. Stir into dry ingredients just until moistened. Fill 12 muffin cup two thirds full. Bake at 375 degrees for 15-20 minutes or until golden.
