The rest is just snobbery. oxxoRobyn Does it matter if I use black pepper when the recipe calls for white pepper, if so do I use the same amount? Does it matter if I use regular salt instead of sea salt in a recipe. Appreciate any help here. Guest guest Posted June 20, 2006 Report Share Posted June 20, 2006 So glad someone answered the " salt " question the way I have always felt and certainly agree with what was said. As to the pepper...there is a difference in the taste of black and white pepper and certainly you can't say that red (cayenne) pepper is like either. The latter of the first two has a flatter hot taste and I certainly would not put it on anything like tomatoes...guess that means acidic. Black pepper is a bolder hot taste that will spread when tasted. I can tell the difference and also do not want black specks doing the back stroke in my creme of leek soup.
