My husband was very impressed, tonight we had sandwiches with the leftovers. Thanks PT for the recipe. Sorry I am replying so late, but I have been busy so every so often I wade through five or six of my saved digests. I am so glad you got to try the easy eggplant parmagiana recipe and it was a success. I love that recipe.
