Guest guest Posted June 23, 2006 Report Share Posted June 23, 2006 I made the meatos recipe- we don't have 'Rotel' tomatoes ( tinned tomatoes with green chilis in) here- so I used regular tomatoes and used a tablespoon or two of salsa, plus a few deiced jalapenos from a jar. I'm not sure if it was the PB i used, the tomatoes/salsa ,or what- but ours came out too sweet for our tastes. I had no idea what sise casserole dish I was to use- so I put it into a glass 9x 13 size pan..... I had to bake it for much longer than the recipe called for and ended up with rather darkish/burnt outside and kinda mushy inside. It never really firmed up. So Judy, do you think you can help me with my mistakes so I can get a better final result?? I tasted alot of tomato flavour- is that the way it was meant to be?? Try using regular diced tomatoes and a small can of chopped green chilies. Also peanut butter with no sugar added. I usually bake mine in a 9x13 in. pan also. Maybe you need to add a little more flour to it before you baked it. My aunt says she sets her casserole dish of this inside a larger one that has water in it, when she bakes it. It will be a little soft in the middle, with the edges more firm. But you shouldn't have it burnt on the edges in order to get it to firm up. Spray the casserole dish with cooking spray prior to putting the mixture into it. Sometimes I need to make it up to 1 1/2 hrs. Yes it is a good tomato hearty " meaty " dish. Try it sliced/spread cold a slice of whole wheat bread and mayo.
