Guest guest Posted July 2, 2006 Report Share Posted July 2, 2006 I don't remember where I found this recipe, and from what I remember crab tasting like, it wasn't like this but still rather good. (Seeing as I haven't had crab in 30 plus years,my memory of it may be off.) Since I've made these a few times, I've found that some of the zucchini was moister than others and needed a little more bread crumbs. Usually those were the zucchini freshly picked from my garden. Imitation Crab Cakes made with Zucchini 2 1/2 cups grated zucchini 1 egg, beaten 2 tablespoons butter or margarine, melted 1 cup bread crumbs 1/4 cup finely minced onion 1 teaspoon Old Bay Seasoning 1/4 cup all-purpose flour (I like whole wheat flour but plain white flour works) 1/2 cup vegetable oil for frying In a large bowl, combine zucchini, egg, and butter or margarine. Stir in seasoned crumbs, minced onion, and seasoning. Mix well. Shape mixture into patties. Dredge in flour. In a medium skillet, heat oil over medium high heat until hot.
