" Nutty Carrot Sandwiches "

 

3 large carrots, coarsely shredded

2/3 cup raw pecans or walnuts, finely ground

1 small garlic clove, minced

4 stuffed green olives, minced

Vegenaise or mayo of your choice

 

16 whole basil leaves (or spinach leaves work well too)

8 slices of bread (I love 7 grain bread with this)

 

In a medium bowl combine carrots, olives, pecans and garlic with

enough mayo to moisten well and hold ingredients together.

Spread bread with a light coating of mayo, spoon carrot mixture on 4

bread slices. Arrange basil leaves over carrot mixture and top with

bread.

Cut sandwiches in half vertically or in quarters and enjoy!!!!!

BIG yum for both the carrot filler recipes! My daughter in love came by as I was

eating my carrots in pita sandwich and said " Ooooooh Mom, gimmie. " So we did

both fillings and enjoyed both equally. I did the first one with just a few baby

spinach leaves and the second with some cole slaw. My DIL e-mailed herself a

copy of both recipes and left with a container of the carrot with pecan filling

and the last of the pita I had made. I think tomorrow I'll make it again and

have it over peanut butter toast.

That was fast.........LOL Happy to hear how much you enjoyed these two recipes

and your DIL also.

Tell her to join and go through the recipe files, she might see certain

recipes you skip over and she can test them out on you.
