Guest guest Posted July 17, 2006 Report Share Posted July 17, 2006 Okay, I am getting tired of sandwiches, fruit salad, fruit or green smoothies, salad, and it is so hot. On my way home tonight it was 114 and rising. ( I live in Red Bluff, CA) Any ideas for vegan summer food that is quick or no cooking (swamp cooler doesn't work in this weather) and not too heavy. Wishing there was a vegan resturant in this neck of the woods. Not even a vegetarian one that I know of until you get to Chico. Tofu with sauce could be precooked and reheated. Rice, same. Cook early one morning or bite the hot bullet and do it all one evening so you won't have to the rest of the week. We had tacos tonight & the only time the stove was on was one burner to do the TVP & one for the rice, not bad at all. Cold soups like Cold Curried Apple and Buttermilk (recipe follows) or a multi layer dip with corn chips. (refried beans, guacamole, cheese or fake cheese, salsa, other stuffies, or hummus and pita bread. Cold Curried Apple and Buttermilk Soup (trust me, this is really rather good) Oil for sauteing (fast cook, can do this in morning, keep in fridge for when you get home hot and tired) 1 medium onion, chopped 1 apple, cored and chopped 2 teaspoons curry powder 3 cups buttermilk 1 clove garlic, minced Garnish fresh dill or parsley Heat oil and saute onion, garlic, apple, and curry powder till soft but not mushy. Let cool, add buttermilk. Chill in fridge. I have put it all through the processor and made it smooth, and liked it that way too. Can substitute cucumber, also really good. Very simple, very fast. Maybe 5 minutes to cut up ingredients and 5 to saute. This sounds odd, but plain old cream of tomato soup from the can made with cold water is actually not half bad when the temp is in the 90's to triple digits as it is now all over the lower 48. That and some crackers and peanut butter might get you through the evening when you are really wiped out. Wish you were here, I'd feed ya! Tomatoes may not be cooked but can make a person hot like eating spicy food.
