Mrs. Buerschaper's Molasses Crinkles 1/2 cup butter or margarine 1/4 cup blackstrap molasses 1 cup sugar 1 egg or substitute 1/4 teaspoon salt 2 teaspoons baking soda 1 teaspoon cinnamon 1 teaspoon allspice 1 teaspoon ground ginger 2 cups unbleached white flour 1 to 2 tablespoons additional sugar 1. Preheat oven to 350 degrees. Lightly grease a cookie sheet. 2. Melt the butter or margarine over low heat. Transfer to a medium sized mixing bowl. 3. Beat in the molasses and 1 cup sugar. Beat the egg or substitute by itself in a small bowl first, then beat this into the molasses mixture. 4. Sift together the dry ingredients (except the additional sugar). Then add them to the wet mixture, stirring until well combined. 5. Use your hands (flour them if necessary) to form 1 1/2 " balls of dough. Place the additional 1 to 2 tablespoons of sugar on a small plate and roll each ball in the sugar before arranging on the cookie sheet. (This coating provides the crinkle factor.) 6. Bake for 12 to 15 minutes, until firm to the touch. Cool on a rack. I believe I rolled them in a cylinder and sliced. I've tried other similar recipes but none have been quite right. The other cookie, a molasses cookie, was my Grandmother's specialty, and was very thin (not as thin as the lace cookie). That is just like my grandmother made them, balls, rolled in sugar and smushed. Cross your fingers that the high sitting over Georgia goes out to sea so the rain can come in. Need cookies.
