My midwife said to use blackstrap molasses as a great source of iron - but the taste of it by itself is not so pleasant. I tried mixing it in with a stirfry, and it didn't turn out very well. Does anyone have any recipes that uses a good amount but hides the flavor somewhat? Or any other ideas of how to get more of it into my diet (or other iron sources?) C. because it helps the iron be more readily absorbed. Here is a site with chart of iron rich foods that are high in iron. http://www.fatfreekitchen.com/nutrition/iron.html You'll see that 1 cup of Bran Flakes, Oatmeal and 1/2 c. Cream of Wheat has a huge amount of iron in it, as does Tofu and Soybeans. It irritates the intestines, and leads to iron loss. It can also make it more difficult for the body to use iron. Most cases of severe iron deficiency in young children are in those who drink too much milk. http://www.drgreene.com/21_1128.html I have read many places that high cow milk consumption can also lead to low calicum, due to the high content of protein in milk. The high protein content in milk will combine with the calicum & will cause you to pee it out instead of absorb it. The cow milk industry tries to convince us otherwise however. It's good on oatmeal too, especially with nuts in too. There are probably a bunch of bread and cookie recipes in the files which would use molasses in a yummy way. Black-eyes peas and spinach are good sources of iron too and tasty together in a happy coincidence. It is a little pricey though. It tastes similiar to molasses and a little better than blackstrap. He will toss in a banana, some milk, a few scoops of the powder shake mix and a few large spoonfuls of molasses. Whir it up in a blender... and you can thin it down by adding some small ice cubes before blendering, then chug-a-lug. Personally I LOVE molasses. I could eat it straight from the jar by the spoonfuls. I have a really good old fashioned soft molasses cookie recipe if that sounds appealing. My mother made these and her mother before.... so good.
