Guest guest
Sometime (no rush !!!!) do you think you could tell me how you make your corn & cranberry bean succotash. I'm so new to cooking beans. My mom never made them so I never got to learn how. Thanks, Maddie Marilyn Daub <mcdaub wrote: I grew up in Connecticut and when we had succotash, it was made with corn and October beans. When I moved to this area of the country, they didn't have our type of succotash, only made with lima beans. I searched and found out that Cranberry beans were the same. I have to get corn and Cranberry beans to make my succotash, but boy is it good!! Much better than with lima beans and a completely different taste. All we put on it is butter and sugar. Guest guest
I'd love to hear how you make them. Do you use dry beans or fresh ones? I learned something new too. I didn't know they had the name of October Beans. Judy Marilyn Daub <mcdaub wrote: I grew up in Connecticut and when we had succotash, it was made with corn and October beans. Guest guest
Actually, I am lazy, so I buy a can of October (Cranberry) beans and a can of whole kernel corn. I pour off the solution the corn is in, but not the beans. I put them in a pot and heat them up. I serve with butter and sugar, in a bowl. This will stay with you for many hours and has often been used by cross-country skiers because of its staying effect. You could get the dry beans, soak and cook like you would a pinto and add the corn, but that is too much work for me as I am a single person. Guest guest
It depends on what part of the country you are from, Judy. I just use a can of each as there is only one of me here, but you could cook up the dried beans and add the corn.
