Speaking of fresh, my husband and I were in a restaurant, and I asked the waitress if the string beans were fresh. You guessed it, she said " yes " and they were canned. When I said that they were canned and not fresh, she said, " Why mam, you can't get any fresher than canned. " Hubby and I had many a laugh over that! Guest guest Posted July 22, 2006 Report Share Posted July 22, 2006 You know, one time I had a huge amount of green beans to make for an event and wanted to make them with fresh green beans to make it taste better. Well, can you believe it, I couldn't tell any difference in string beans, and after I had gone to all that work, I was sick. LOL Pole Beans are a whole different story. I love to cook them with fresh diced up potato, some Ms. Dash and shredded carrots. I want to try succotash this way also. I too love it much better with fresh lima beans. Yesterday I bought some fresh shelled lima bean, purple eye peas and field peas with snaps at the local produce stand. I am going to cook them all together. Fresh beautiful eggplants, beets with the greens, round zucchini, summer squash, new potatoes. My car was full and I have a pot of mixed vegetables on right now. Also fresh corn, and I have one in with the vegetables. I will have some eggplant later in the day!!! The Farmer's Market makes sure they have some for me. They are a mealy bean and I love them. Guest guest Posted July 22, 2006 Report Share Posted July 22, 2006 Suspect that you are comparing fresh string beans to those you have canned yourself (which I have never tasted). Of course, my mother cooked hers MUCH longer than I do and hers were closer to canned. Going to try adding potatoes and shredded carrots next time I make them - thanks. You must have much better produce stands than I do. I've never seen purple eye peas and field peas with snaps, and only fresh lima beans rarely.
