My daughter is getting some mis-information about so called safe oils and I would like for her to read these articles. She told me that her information states that olive oil is not one of the safe oils to heat. I don't recall who posted the articles but would appreciate if you would tell me where to find them. There a;ways seems to be a conflicting article out there. Since using olive oil my cholesterol has dropped. I was using canola oil before. Guest guest Posted July 22, 2006 Report Share Posted July 22, 2006 Extra Virgin olive oil (meaning it's the oil from the first pressing of the olives) has a low smoke point. That means that it starts to burn and smoke at a lower temperature which is a bad thing. However if you use olive oil that is NOT marked " virgin, " then the smoke point is much higher and excellent to use for sauteing and such. Isabel Barzana, Betis (one of the olive oil brands here in Puerto Rico) Exportations Manager, says that you shouldnt heat it over 200 degrees because toxic compounds may appear. Plus... I've heard that you should never heat, bake, or anything in extra virgin olive oil the one that says 'first cold pressed'. Its recomended to be used only fresh.
