plum butter?

Hi all,

 

I scored a case of plums today & was thinking I'd try to make a plum

butter in the crockpot, like apple butter. Has anyone done this? I'm

wondering if I should peel the plums - the skins are kind of sharp

tasting sometimes.

 

Any advice appreciated :)

Plum Butter Recipe

 

11 cups pitted, thinly sliced plums

(approx. 4 1/2 lbs. whole)

3-3/4 cups sugar

1 cup water

1/2 tsp. cinnamon

 

In a 6-8 quart saucepan, combine plums and water. Simmer 12-15 minutes or

until skins separate from fruit, stirring every 5 mins. Press through food

mill or sieve. Pour mixture back into saucepan. Add sugar and cinnamon. Over

med-high heat, bring to a boil, stirring constantly until thick, about 20-25

mins. Mixture should be thick and smooth (test on a cold plate).

Immediately fill hot jars (half-pints) with mixture leaving 1/4 inch

headspace. Process in boiling water canner for 5-10 minutes.

 

Yields 5-6 half-pints

-Diane,

I have not made plum butter but checked my book " Perfect Preserves "

and the recipe does state to peel the plums by immersing them in

boiling water for 45 seconds, remove and plunge into cold water.

States that the peels then can easily be removed with your hands.I

can send to you the complete recipe if you would like it. This warns

that the plum butter cools rapidly so one must work quickly to pour

the hot mixture into the jars. Seems to me the crock pot idea would

be perfect as you would not have to worry about stove top sticking or

scorching and it will stay hot.

I have the info from my book " Perfect Preserves " on how to peel and

prepare the plums. I would be happy to send it to you if you need it.
