Hello to everybody,

I haven't been in here in what seems like forever. I was very sick and then just

inundated.

 

Thanks so much to everyone who wished me happy birthday and to get well. Thanks

to Donna for keeping this group up the way she does. I don't know how she does

it, she is an incredible person.

 

Ironic the first post in a while I respond to, and it is someone from Philly. I

am from Philly, in the Northeast, Rhawnhurst to be exact, where are you from

Roxanne?

Hi Group!

I made these noodles tonight with our dinner. Let me just say they are

FANTASTIC!!! I am fortunate to live close to several Asian supermarkets and

have

purchased a slicer that is similar to a small mandolin...I used this to cut

the " noodles " for me. I will be making these over and over again!

 

I also made the marinated tomatoes.....Oh my goodness!! DELICIOUS!! I am

considering making many of these and pureeing them into a tomato sauce for

over

the zucchini noodles. Oh my, they would be fantastic as the base for

bruschetta! They are just so rich tasting, caramelized and just plain good!

 

In addition, I made the Cucumbers with Tomato, Onion and Mint - FANTASTIC!

So easy, all the recipes were just so simple!!!

 

Thanks so much for all the terrific recipes! Keep em coming!
