Guest guest Posted July 26, 2006 Report Share Posted July 26, 2006 Brazilian Rice with Coconut Milk 3 tablespoons vegetable oil 1 small yellow onion, finely chopped 3 gloves garlic, crushed 3 cups white long grain rice, washed, drained 1/2 teaspoon salt 4 cups boiling water 1 can coconut milk, 14 fl. oz. Heat the oil in a medium sized pot and stir-fry the onion and garlic until golden brown. Add the rice, stirring with a wooden spoon, until the rice is hot and coated with oil, about 3 minutes. Add the salt, boiling water and coconut milk. Bring to a boil, uncovered, until the liquid is almost evaporated, about 5 minutes. Cover and simmer about 20 minutes or until the rice is cooked.
