Guest guest Posted July 28, 2006 Report Share Posted July 28, 2006 Pan-Fried Tofu Steaks 1 cup mixed dried beans 1 package silken tofu, about 11 ounces 1 tablespoon potato starch or cornstarch 2 tablespoons olive oil 3 tablespoons soy sauce 3 tablespoons mirin 1 tablespoon sugar 3 tablespoons water Soak the beans overnight in a bowl of water. Rinse, then boil in a large pot of water for about 1 hour, until a bean pressed between the fingers is easily mashed, then drain. Sprinkle the tofu all over with potato starch (do not drain the tofu). Heat the oil in a frying pan, add the tofu, and fry until both sides are golden. Add the soy sauce, mirin, sugar, and water to the frying pan, and heat until the mixture thickens. Arrange some of the beans around the edge of a serving dish, leaving the center open. Place the tofu in the center of the dish. Scatter the remaining beans around and cover with any leftover sauce from the pan. Makes 4 servings.
