Guest guest Posted July 30, 2006 Report Share Posted July 30, 2006 Last night I defrosted a pack of 6 pitta breads by mistake (took them out of the freezer to get at something else and then forgot to put them back) so as I live on my own that is quite a lot of pitta to get through in the next couple of days. I am trying out a new recipe for falafel for tonight (which I shall post later if it is successful) but I was wondering what you all ate with pitta bread. Tofuna, eggless egg salad, faux chicken salad made with tempeh, and the list goes on. Mo likes to open them, brush with spaghetti sauce and bake on a cookie sheet. I have split them flat, sprayed with cooking spray on both sides and cooked them crispy in the dry skillet and used as tostada shells. Hope this is come help. Guest guest Posted July 30, 2006 Report Share Posted July 30, 2006 My favorite gyro is hummus smeared all over the pita, layered with a veg burger cut in 3 strips, thin sliced red onion, lettuce leaves, thin slices of red tomato, all drizzled with hot sauce or indian garlic pickle or preserved lemons. You could toast the pitas & make pita chips or break in smaller pieces and keep the toasted bits for croutons for soup & salad.
