Acorn Squash and Kale Over Penne

Acorn Squash and Kale Over Penne

 

6 cups, cubed peeled acorn squash, about 2 medium squash

1/4 cup water

1 tablespoon olive oil

2 garlic cloves, minced

8 cups coarsely chopped trimmed kale

1 cup organic vegetable broth

1/4 teaspoon salt

1/4 teaspoon crushed red pepper

1/4 teaspoon grated nutmeg

4 cups hot cooked penne

2/3 cup shredded Parmesan cheese

 

Place squash in a casserole dish with 1/4 cup water.

Cover with plastic wrap. Microwave 7 minutes on high or until tender.

Heat oil in a Dutch oven over medium-high heat. Add garlic; cook 1 minute,

stirring constantly. Add kale and broth; cover. Cook 3 minutes, stirring

occasionally. Uncover; cook 1 minute. Stir in the salt, pepper, and nutmeg. Stir

in squash and pasta, tossing gently. Sprinkle with cheese.

Makes 6 servings.

About the acorn squash -

Is the skin tough like butternut or easier like

Zuccini and the like...I want to try this badly but

have never prepared acorn squash before. If it's tough

I won't be able to do it right yet.

It is a winter squash, so the skin is tough. As a child, my mother just cut

them in half, took out the seeds and threads, put butter and brown sugar in

the hollow and baked them. Talk about delicious!!

I love them that way too Marilyn :) Also with butter, brown sugar &

about a tsp of cajun spice mix -- sweet & hot yum! G'pa likes

molasses on his.

That would give them a kick!!! Coming originally from Connecticut and

making our own Maple Syrup, they are good with that, too!!!
