I'm not vegan, I just don't want them there if they don't make a huge difference on how the lasagna turns out. Input please. I've never forgotten to add the eggs, but I would imagine that you could get away without them if you use Ricotta that is on the dry side. Give it a try, what's the worse that could happen?....really runny cheese? then again, letting it sit a little longer might take care of that. I got ener gee egg or soemthing, somebody help me out, what is it called, ener gee/ LOL I haven't tried it in everything yet. I tried using ground flax seed and water as a replacement for my matzo balls, and they fell apart. Guest guest Posted August 1, 2006 Report Share Posted August 1, 2006 Hi Marcella I have discovered that eggs are really not necessary in most cooking - (although it's possibly difficult to make an omelette without them.) You can buy egg replacer (mine is a mixture of potato starch and tapioca flour) which can be mixed with water and I have successfully baked cakes with that. You can often use other things like banana or flax seed meal to bind stuff together (something I learned from this group). I can't see any reason for using eggs in lasagne.
