golden beets

Judy, you know I'm not a beet fan but I do like the golden beets, they

don't have that earthy sorta dirt flavor like the red ones.

I like to make salads and lay slices across the top. They also make a

nice garnish around the edges of a potato salad for a buffet.

DH always takes about golden beets and how much tastier they are than red, I

have never seen a golden beet myself.

I found them at Whole Foods - keep an eye out for them, maybe you'll get lucky

over the summer!

I am able to buy golden beets @ my local food Coop year around. I have been

cooking with them for at least five years. What I like about them is that they

are great in my bean and mixed vegetable soups that I try to have on hand all of

the time. They have all of the great beet flavor, but the red beet color does

not visually obscure everything else in the soup.

 

I have also cooked them plain, saved the cooking water, and made gravy with that

water. The gravy/sauce has a delicate slightly sweet flavor that no one can

identify.

Just wanted to share that we tried golden beets for the first time tonight, yum!

Simply cleaned the outside, trimmed the greens, steamed til tender, peeled then

sliced with some butter and a little sea salt!
