Julie I never use it past the expiration date. Guest guest Posted August 3, 2006 Report Share Posted August 3, 2006 I try to buy tofu in bulk at my local coop where it comes from a local tofu factory that delivers it every day. I try to remember to change the water daily. The water coming from the tofu is great to water your house plants. If I do not use it within a few days, I find that the flavor begins to taste like the stuff in the sealed plastic containers. I usually freeze it if I don't use it right away. After about one week in the freezer the texture completely changes and it can be used as a " ground meat " substitute in various recipes like spaghetti sauce. Kathleen M.
