Ok so now I have a question. What is the difference between cutting something

with a knife and eating it immediately or taking a bite with your teeth? Are

you saying those nutrients dissipate with a knife cut but somehow disperse in

your mouth if you bite??

there.!lol!

 

anyhow,

 

my experience is about the equivalent of a head of lettuce (maybe a

combination of fresh, young, organic field greens, some young spinach,

maybe a little Bibb - depends what's available..)....maybe throw in a

zucchini, a cucumber, and some celery..maybe a couple of

tomatoes....it's not precise...

 

eat as is, with minimal " chopping " - large pieces, or whole pieces.

Every now and then, I'll just get into the car with a head of lettuce, pluck

off the leaves one by one, and eat them while I'm driving.

 

Another idea: banana burritos.

 

One big lettuce leaf

One bananananananana

2-4 dates, as you wish

 

Put the dates (pitted) and some water into the blender (high-speed works

better) and blend until liquid (sort of, depending upon how much water you

put in. I recommend only a little in this brew.)

 

Put the bananananananana on the lettuce leaf.

Pour the date sauce over the bananananananana.

Roll and eat.

 

For a sturdier burrito, use two leaves, it does a body good. (Hmmm, seems

I've heard that in a jingle somewhere before... :)

 

As to the original question, a decent-sized head of lettuce a day seems like

a good target for most people. I love my salads with tomatoes, nice moist

organic heirloom summertime tomatoes, no need for any dressing ever!

I couldn't possibly eat that much on most days. My smoothies have lately shrunk

from 3 dates, 3 bananas and berries to 2 dates, 2 bananas and less berries., A

bit of fruit before that and a salad sometime in the afternoon. I think my body

assimilates a lot more than it used to. Lane

Hi !

 

I'd say an imperceptible difference nutritionally if it's eaten

immediately. Every time we " cut " a fruit/vegetable, we expose more

of the surface area to oxidation, which in this case is exposure to

air. I've forgotten the actual data, but it's something like,

sliced tomatoes lose ~80% (again, don't quote me of the %, it's order

of magnitude I wanted to show...) of their Vit. C in the first " x "

(maybe 5) minutes. So, yes the nutrients will dissipate if exposed to

air/oxygen. I was quite surprised by how much Vit. C was lost in

tomatoes, and how quickly. It helped me understand why " whole " , as

close to fresh as possible, or quartered and eaten, etc.... taste

just so much better than say salad bar sliced tomatoes, which may

look great. No telling how long ago they were sliced.

 

Have you ever noticed how quickly lettuce will turn brown after it's

been cut with a knive?

 

And while not as important to me, and yes, I do uses knives! lol!,

it seems closer to whole to just eat _____ uncut. I personally now

aim to keep many things as close to whole as I can, for as long as I

can, before I eat them. Just seems to be something about Nature

having provided the perfect protection for the fruit/vegetable,

etc..etc.. I've experimented with just " biting " into a tomato, for

instance. It's too messy for me...don't care (nor do my table

companions! lol!) for the juice going everywhere.

 

so, practically what does this mean to me? Frequently, I'll just

tear off a bunch of lettuce leaves, tear/cut off stalks of celery,

put whole tomatoes, quarter a cucumber and call it a salad. As I'm

going to eat the tomatoes, I cut them with a knife. It was a little

strange (more than a little strange actually..seemed very weird to

me) when I first tried it, and now I actually like it better. And,

it's very quick to get a salad prepared this way. On slightly more

adventurous salads, I'll drizzle lemon juice (just cut and squeezed),

and then for really wild times, I'll maybe make a " dressing " from

some strawberries and nuts blended up <== that's now a " treat " for me.
