Copying from another email group, here was one person's answer as well as another person's suggestion: " My understanding on the teflon issue is that is has to do with mechanical contact in cooking pans (such as using a kitchen tool to scrap and/or flip something in a teflon coated pan). We have used our teflex sheets for years and have not seen any degragation in the material. This is a good indication that it is not sluffing off into the food. " You can always use parchment paper (baking paper) in place of the teflex sheets. " They sell a chemical-free variety at health food stores in a brown box for around $4-$5 a roll.
