Vitamix recipes!

I LOVE my VitaMix, bought it 3 months ago and don't know how I did without

it all these years! Here are two of my favorites:

 

 

Cold Veggie Soup

(serves 2)

 

4 cloves fresh garlic

1-1/2 avocados

 

1 jalapeno, seeded and deveined

 

 

juice of 3-4 small lemons

squirt of Bragg's or sea salt to taste

olive oil (1-2 Tablespoons)

 

 

small handful of cilantro

1-1/2 beefsteak tomatoes

 

1-1/2 c. celery

 

1 red pepper

1 yellow pepper

 

Cut up veggies, whiz in blender. If you put them in the blender in the

order above, they will blend easiest. Just whiz it to the consistency you

like.

(Use 1/2 jalapeno if you don't want it spicy!)

 

 

Babaganouj (or Eggplant Dip)

 

1 eggplant, sliced

1/4 c. lemon juice

1/4 c. tahini

2 cloves garlic

2/3 T. salt

1 T. olive oil (use more for the grilling)

 

Brush eggplant slices with olive oil and grill lightly till soft. Peel,

then throw everything in a blender and whiz! (Okay that's the recipe, don't

recall where I got it from, but I got REALLY tired of peeling those eggplant,

so

now I just toss the whole slice in unpeeled. I can't tell any difference!)

Vitamix recipes!

I just got my first Vitamix - the newest 5000 - and I love it! But I

bet those of you who have had one for awhile get better use out of it,

so I was wondering if you could post your favorite Vitamix recipes! I

would be forever grateful! So far I have made shakes, hummus, salsa,

smoothies, ice cream, etc!!!

Tim, I grill the eggplant--oops, I guess that isn't raw, is it? Sorry! I

was using it in an Ezekial tortilla (sprouted grains, not baked) with avocado

and lots of sprouts. I do think it would be good on celery sticks for your

kids.

Susan -

 

On the Babaganouj recipie, do you grill/cook the eggplant, or use it raw in

the vitamix? My kids love " baba " and I would love to be able to offer a raw

alternative which I can enjoy also.

 

What do you eat with the baba? My kids eat it with pita bread, but, I'm

trying to think of an appropriate raw dipping item. :-)
