Pineapple Gazpacho <from Dole Nutrition Institute...www.dolenutrition.com> 3 cups fresh*golden hawaiian pineapple cubes, divided 1 medium peeled and seeded and cubed cucumbers, divided 2/3 cup chopped red onions,divided 1 cup chopped and seeded yellow peppers, divided 2 tablspoons chopped cilantro 1 tsp chopped jalpeno peppers 2 tablespoons sugar 2 tablespoons italian salad dressing 2 cups pineapple juice put half of the vegetables and pineapple in medium bowl and reserve <set aside> . combine the rest of the ingredients in a blender including the other half of the pineapple chunks and vegetables nad process until smooth . Stir into reserved pineapple mixture. cover and refridgerate 2 hours or until well chilled. Serve. * note; can use drained canned pineapple chunks if you want to.
