Specifically, are cordials raw? I, and my friend Dr Goldberg, have often referred to this as the " feasting and fasting syndrome " , as those that become caught up in it, tend to forget that these are only two aspects of a multifaceted lifestyle. A healthy lifestyle contains many,many factors, the psychological one being as important, if not more so than any of the others. I would like to share with you a recent experience to illustrate my point. About twelve months ago a client, and close friend, who had been living a squeaky clean Hygienic lifestyle on the physical level, for at least 15 years, developed and was diagnosed as having prostate cancer. He lives in an unpolluted area, in the country-side, on the banks of an unpolluted mountain river in which he bathes each day. Is happily married, eats raw food, mostly home-grown and/or organic. Gets plenty of sunshine and sleep and exercise etc. What more could one want ? The question is, " why then did he develop cancer " if he was living such a healthy lifestyle? The answer lay in the arena of psychology. My friend is blind. He was not born blind and his eyesight has deteriorated over his whole life. In his early years he trained as an electrician and motor engineer both areas in which he is now qualified. By the time he had reached his early twenties his sight had deteriorated to the point where he gave up his driving licence. His condition was diagnosed as macular degeneration, cause unknown. Due to his condition he was unable to find employment. My friend is a highly intelligent person and is known for his wit wisdom and colossal memory and is well liked by all that know him. Once having familiarised himself with an area he is able to traverse it quite safely completely un-aided and it is hard to believe that he cannot see. In spite of all of this he felt quite inadequate as no-one would employ him in any capacity. This invoked periods of depression even to the point of suicidal thoughts. And this all of his life. He is now 67. We addressed this problem through meditation, positive thinking exercises and relaxation CD's.Twelve months down the track, my friend is now almost fully recovered and back to his old self. This is such a nice positive story that I felt I should share it with you. John John L. I don’t know how it’s made, hence my question. ~ Balsamic vinegar is an aged reduction of white sweet grapes (Trebbiano for red and Spergola for white sauvignon) that are boiled to a syrup. The grapes are cooked very slowly in copper cauldrons over an open flame until the water content is reduced by over 50%. Also, what (if any) alcohols are raw? Specifically, are cordials raw? ~ The only living alcohol there is would be wine. It is not cooked or heated, simply mashed and fermented. All other alcohol, including beer is first boiled or distilled, then left to sit and ferment or age. Again, wine is the only raw alcohol.
