Yes. the recipe calls for fresh corn(although frozen, but first defrosted works too). Use whatever kind you want, get try to make sure it not genetically modified. If i had the time, juicing the carrot is better. Personally, I usually buy the carrot juice from Trader Joes. I make sure its the organic kind. i forget to add, a dash of cinnamon goes in this recipe too. You have to try it - yummy. hope that helps........ But I way I look at it, is I can't go overboard (then I will not be able to stick with it for the long-term). I don't have the time, the money, etc to do everything " perfect. Does the fact that you are freezing it without doing anything but shucking it keep it from tasting weird? I also made some cashew " gravy " and used some <gasp!> Braggs and olive oil. It isn't something I do often but it's better than what I was eating a year ago by a long shot. I have no idea because I have never noticed that. Maybe that is what gave it an off taste. Could it be that it might just have been a bad ear of corn? Maybe a residual taste from other stuff in the freezer. I'd love to be able to have a ready supply of good summer corn when I want some corn chowder or come " chips " . I wanted to respond to the emails on corn..... My mother always had a large vegetable garden until a few years ago as did her mother for many years. When preparing corn for the freezer she/they never blanced either the whole ear or the corn scraped off (we called it cream corn) and frozen in bags. Never had a problem with it. On another note about the corn... you can find a corn scraper at Wal-Mart in the summer months that makes a quick task of cutting the corn off the cob. It is a long (approx. 18 " ) wooden board with a metal cutting area, located with the canning equipment. The corn slides down the wooden part, across the blade and off the corn comes. Easy to clean up and easy to use. It actually got rid of some of the starchiness in the corn.
