LEAH....Question about this receipe

Leah,

 

Sorry, for not replying sooner. I've been so busy! Yes. the recipe calls for

fresh corn(although frozen, but first defrosted works too). Use whatever kind

you want, get try to make sure it not genetically modified. If i had the time,

juicing the carrot is better. Personally, I usually buy the carrot juice from

Trader Joes. I make sure its the organic

kind. i forget to add, a dash of cinnamon goes in this recipe too. You have to

try it - yummy. hope that helps........

What kind of raw crackers?

 

THERE'S MANY RECIPES OUT THERE. LOOK AROUND ON SOME RAW FOOD SITES. YOU NEED

A DEHYDRATOR IF YOU DON'T HAVE ONE. MY FAVORITE ARE:

 

3c CORN KERNELS

LG HANDFUL OF FRESH CILANTRO

1 OR TWO YELLOW OR RED BELL PEPPERS

3/4 GOLDEN FLAXSEED, FINELY GROUND(ABOUT 1 CUP)

1/2 HEMP SEEDS

1 OR TWO JALAPENO PEPPERS

1 OR TWO t GROUND CHILI POWER

1 OR TWO T SEA SALT

2 T GROUND CUMIN

ADD 2 T OF WATER OR LIME JUICE

(THROW ONIONS OR ANYTHING ELSE YOU'D LIKE)

 

PROCESS IN FOOD PROCESSOR, SPREAD ON TEFLEX-LINED SHEETS, AND DEHYDRATE AT 115

F FOR 6 HOURS(CAN BE MORE OR LESS TIME). FLIP ON TRAYS AND PEEL AWAY LINERS, AND

DEHYDRATE MORE HOURS(6 OR SO UNTIL DRY)

Jen,

Now _I_ have a question about the corn. Doesn't frozen corn have to be

blanched before it's frozen to kill the enzymes? Wouldn't that make it

not raw?

You're probably right. But I way I look at it, is I can't go overboard (then I

will not be able to stick with it for the long-term). I don't have the time, the

money, etc to do everything " perfect. " I'm finding quality of life is better

than perfection. Good question though.........;-)

freezing. I am sure all commercially frozen corn has been blanched. I have just

cleaned the ears and put it in freezer bags to throw in the freezer. I have not

had a problem in doing this. So the next time you find a good deal on fresh corn

stock up then you will have a tasty supply that you know is raw.

I'll have to try it. I know that when I did that with corn that was

cut off, it would develop an unpleasant taste. Does the fact that you

are freezing it without doing anything but shucking it keep it from

tasting weird?

Jen,

I know, I know. I broke out the dehydrator today and made some

" burgers " and pesto stuffed mushrooms. I also made some cashew " gravy "

and used some <gasp!> Braggs and olive oil. It isn't something I do

often but it's better than what I was eating a year ago by a long

shot.

I haven't noticed an off taste to it. I have heard that to some people knives

will leave a metallic taste. I have no idea because I have never noticed that.

Maybe that is what gave it an off taste. Could it be that it might just have

been a bad ear of corn? Maybe a residual taste from other stuff in the freezer.

HMM Now I want a nice fresh ear of corn:)

cut off, it would develop an unpleasant taste. Does the fact that you

I don't know. It might be that exposing the cut corn to the air

activated the enzymes some way. I'll be sure to try it, though. I'd

love to be able to have a ready supply of good summer corn when I want

some corn chowder or come " chips " .

Could it be that it might just have been a bad ear of corn? Maybe a

I am new to the list and have not introduced myself however I will in a separate

email.

 

I wanted to respond to the emails on corn..... My mother always had a large

vegetable garden until a few years ago as did her mother for many years. When

preparing corn for the freezer she/they never blanced either the whole ear or

the corn scraped off (we called it cream corn) and frozen in bags. Never had a

problem with it. On another note about the corn... you can find a corn scraper

at Wal-Mart in the summer months that makes a quick task of cutting the corn off

the cob. It is a long (approx. 18 " ) wooden board with a metal cutting area,

located with the canning equipment. The corn slides down the wooden part,

across the blade and off the corn comes. Easy to clean up and easy to use.

When I froze my fresh corn I did it in water. I was thinking that would

keep me from having freezer burn. It actually got rid of some of the

starchiness in the corn. I did have to thaw it out to use it, but it

tasted quite good in my corn chowder :)

I feel mahvelous as long as I stay away from cooked. My one cooked

meal was good going down but the effects were awful. It made me even

more of a true believer in raw!
