Most dehydrators are pretty quiet. Mine produces very little noise. If there is much at all, it's " white " noise. The fans aren't huge and they turn only fast enough to circulate the air through the trays. 2. I use my recipes as " treats " and not part of my usual daily fare. Winter is when I eat them more than any other time, too, because there aren't as many yummy fresh fruits and veggies around. I was once on a 80% carb, 10% fat, 10% protein cooked food diet (and felt better than I did on any other cooked food) so the 811rv was a natural raw food diet for me. My daughter and her husband went on the high fat raw food diet and were unable to maintain it for much more than a month. I'm almost nine months now--long enough to have carried a baby to term! I started out looking like I could be a pregnant old lady but no more! There are some low-fat recipe books out there if you look for them. I have a few low-fat recipes on my blog, though I'll have to admit that most of the ones I've posted are high-fat. The private forum I belong to has a recipe section that has a lot of low-fat ones. 3.
