Fermented Goodies

I still have a hard time understanding how fermenting can be good - I know the

live cultures may be beneficial to our digestive systems, but isn't the food

itself kinda rotten?!

Funny you should say that. It was exactly what I was thinking. I do

know it wouldn't grow if you planted it so it isn't exactly " living

food " . I know fermented foods can add flavor but I don't know if

that's a good argument for eating them.

definition of living food is that it has the Enzymes intact..its the enzymes

that make a biological system a living system. Fermented foods are still enzyme

rich and their enzymes have not been depleted. Plus all the primary materials ,

carbs, proteins etc have been broken down by the action of bacteria to simpler

sugars and amino acids..so they are pre-digested foods..

All I know is that Ann Wigmore set great store by fermented foods,

such as rejuvelac and nut and seed cheeses, and sauerkraut.

That's good enough for me.

which recipe do you want , there are quite a few things in

there...enough to write a book I would say...but hey I cant do the

Organic Avo :-)

I thought that was the current definition of " raw " food. " Living "

food is one that will grow if planted. A carrot top will sprout if

put in water but it won't grow if it's blended or juiced but it's

still raw. I know this is splitting hairs. Or enzymes? :)
