Guest guest Posted March 19, 2006 Report Share Posted March 19, 2006 After staying up way to late on Friday going through Judy's blog and printing off recipes I decided I needed to head back to the health food store (45 minutes away) to get some more things to cook. I first made the Chocolate Fudge and oh my goodness!!! As I started to take my first taste I smelled the Almond Joy candy bar, which I love and seldom get. This chocolate fudge smells just like it and I would bet it would be great with shredded coconut mixed with it and made into balls. I did only make 1/4 of the recipe as I LOVE chocolate and didn't want to much of a temptation around. Also I tend to reduce the recipes to make sure I like them before I use up expensive ingredients on something I don't like. Besides it is just me and my golden and she tends to eat even my most undesirable attempts of cooking!! So now Judy's meatballs are in the dehydrator and flax seed for her crackers are soaking. I am trying to add more to the blog each day - but sometimes it doesn't cooperate - I am dying to show you the vanilla ice cream and my apple pie!! To die for!. Glad you loved the fudge. We made more yesterday. It takes us (5 of us) about 2 weeks to eat it all because we just cut off a tiny piece each time. My husband wants walnuts in it next time! Enjoy the meatballs. Oh they are heavenly. We made more crackers last night too. I can't believe how delicious 2 cups of soaked flax seed and bell peppers and my home made salsa can be. I added a little onion but not much. Tried to make them a little plainer this time. VERY GOOD. more on the blog - hopefully. You said that Joey ate four of the meatballs with ketchup. Can you share your recipe for raw ketchup? I never was one to eat it when I ate cooked but it would be a nice addition now. Do you think the fudge would work with carob? Thanks! I was orginally blogging only for my family - so they understood! Sorry. I honestly think the fudge would be perfect with carob. I used cocoa because it is all I have.
