Guest guest Posted March 21, 2006 Report Share Posted March 21, 2006 Hi Kefir King, My favorite recipe for raw falafels comes from Brigitte Mars' book, Rawsome!, and they really are rawesome: Falafel Balls This recipe is an example of the best of ethnic cuisine converted to raw form. Serve with Tahini Sauce (see below). Yield: 6 servings 3/4 cup almonds, soaked overnight, then rinsed 3/4 cup pecans, soaked overnight, then rinsed 1/2 cup sesame seeds 1/4 cup chopped fresh parsley 1/4 cup chopped fresh cilantro 1/4 teaspoon ground black pepper 2 tablespoons lemon juice 1 teaspoon cumin seeds 1 teaspoon Celtic salt 1/4 cup water Combine all ingredients in a food processor and puree. Shape the puree into 1-inch-wide, 1/2-inch-high patties on solid dehydrator sheets and dehydrate until crispy on both sides, turning the patties over when the top is crispy (8-12 hours total). (I use a melon baller and make small balls instead of patties. You want the outside crispy and the inside soft for most delicious flavor.Drying times will vary, depending on temperature, humidity, etc. --Jennifer) Tahini Sauce Serve on Falafel Balls. Yield: 1 1/2 cups 1 cup tahini 1/2 cup lemon juice 1 clove garlic 1/2 teaspoon Celtic salt 1 cup water 1 teaspoon cumin seeds 1/2 cup chopped fresh parsley Combine all ingredients in a blender and blend until smooth. (This cookbook has some of the best recipes ever, including Indian food, scones, and more!
