Me too! Yum!! However I do like some organic olive oil with it.

For salad dressing, nothing beats fresh lime juice. If I'm out of

limes, I'll use lemon. If I'm feeling really dangerous, I'll mix lime

juice, olive oil, sea salt, agave nectar, garlic, and onion powder.

If you want to go with all fresh, you could grate some onion and use

it instead of the powder. Then pay for it all with stinky sweat!

I wish I liked it! I find I need more flavour than just the juice,

I've tried it and it's not enough. I think the reason I've been

having problems finding a homemade dressing is because I don't like

the olive oil flavour - it's always too strong. I'll have to

experiment more - but so far, I haven't been successful at covering

up the oil flavour.

No, I've never been a salad fan...I've always needed lots of tasty

toppings, cheese, salad dressing etc in the past to eat them.

You can get the oil/fat from any of the fatty nuts- macadamia, pine,

brazil are good one. Just put them in the blender and process them

until they are as fine as you can get them. Then put in a little

liquid, coconut water is wonderful, but just plain water will work.

When you get the consistency you want add your other ingredients,

vinegar, fruit, salt, pepper, etc. By using the nuts you are adding

that taste of fat that we need to give it a fuller more satisfying

feel. By using the nuts you are also getting some protein.

Jen,

 

It's a rare night that I have a hard time sleeping but tonight is one

of them. I turned on the light and picked up Green for Life by

Victoria Boutenko and started reading where I'd left off last time. I

immediately started thinking of you. She was talking about how greens

just totally turned her off, though she had the belief that they were

essential for her health. She tried with all her might to eat salad

and used lots of extras to " dress it up " so it concealed the taste of

the greens. She couldn't get much down before she'd have to give up.

Then she hit on the idea of using her VitaMix to blend kale so she

could drink it. She had a container of it but when she smelled it, she

was completely turned off. She said it had a strong " wheatgrass " smell

and was revolting. She took one taste and knew that wasn't the answer.

Then she had the idea of putting bananas in with the kale and that did

the trick. That time, it smelled and tasted " fresh " but not

unpleasant. Maybe that would be the answer for you to get your greens?

 

I think I'll go crawl back in bed and see what happens. I have to get

up in about three and a half hours and get ready for work!

Thanks Tommie! I've actually been toying with the idea of trying to

add kale to a smoothie. I've never had it before, and I don't have

a vitamix, but I'm sure I can figure something out with my blender.

I've heard that it's good to soak kale before adding it?

 

I've been bringing salads to work for lunch - they're just so easy

and portable. Some days I just use a lot of avocado, and that makes

it taste good - but there are days when I want to have avocado for

dinner, and those days I try to use a dressing instead, so that I'm

not overdoing it with the avocado. That's why I've been trying so

hard to find something I like....I'll keep trying :)

Jen,

Maybe I should have added " I don't like kale in a smoothie. " That's a

personal thing, though. It might be different with you. My green of

choice for a smoothie is spinach. I don't put avocado in my fruit

smoothies because the fat and sugar aren't a good combo. This

morning, I'm having a banana/pear/spinach smoothie and it's GOOD! And

GREEN! It's the last of my organic spinach. :(

 

Have you tried a blended salad? There are some recipes on the WWW for

them if you google.

I did try a " vegetable soup " once - it was a recipe where it seemed

I just threw a whole bunch of vegetables in a blender. I wasn't a

fan - it seems wrong to drink vegetables, lol. I'll try throwing

spinach in a smoothie one day - but I don't think I'll be making

them a primary meal like I do with salad. That's why I'm still on my

quest for a dressing...I'll have to keep trying.

There's another thing with salads. You need to chew the veggies until

they are liquid. You probably knew that already. :) That takes a lot

of time and patience. Blending helps with it.

Okay, Jen, I was never a salad fan either. My room-mate is into these

" restaurant-looking " salads, where you can see each part really

separately, like: " here's a tomato, and here's some green pepper, and

here's a leaf, and a speck of onion " , where you can actually spear the

separate parts. That doesn't really rank with me, probably because I

am too lazy to chew the stuff.

 

I think salads are good, and I can make them delicious (for me).

I put whatever is going in the salad into my food processor and

process it into tiny bits (not quite baby-food consistency - although

I have considered trying that!). I put them all on a plate, either in

clumps, or piled together, add some sprouts, and then " start cooking " .

I can add some garlic, some dehydrated herbs, or even some crumbled

up (best way for me is in the food processor) raw crackers. Then I

just pour on some oil and (dare I say it?) vinegar. A couple of times

I have gotten such a nice blend that I only added a little flax oil.

I usually taste the mix before I start adding seriously.
