Can anyone help me with that one please? Guest guest Posted April 30, 2006 Report Share Posted April 30, 2006 Minnie - I don't make almond cream, but sometimes I make macadamia nut cream. Nuts, water, dates in a blender. Blend until smooth and fluffy like whipped topping. I used to do it with cashews until I discovered how un-raw cashews really are! I saw Cherie Soria (http://www.rawfoodchef.com/) make some once. She soaked the almonds and then peeled every single little kernel with her fingernails!!! To make an almond like fluff. Too much work for me. If I use almonds I leave the skins on! Guest guest Posted May 2, 2006 Report Share Posted May 2, 2006 dunno, I eyeball, but a good guess is 2 cups nuts 5 dates or more for your taste water to about 3/4 of the way up the nuts, better to have not enough than too much Probably will burn up a regular blender after a few batches. Trick is to blend the dates with some water to make a paste, add the nuts and more water to make the fluff. There should not be a hint of nut, no graininess (is that a word?) nothing, just pure smoothness. I have an inexpensive 'regular' blender, so that's probably how I will do mine.
