I've heard that most of the vitamins and minerals are either in the skin or just under it. Then, again, others say to peel to get rid of organisms. If you want to get B-12 you shouldn't even wash them but I don't want to eat dirt, either. Some people do. I don't know that they actually want to, but they eat it. So, I'd say do what you want and if you like the peeling, eat it if it hasn't been exposed to any " cides " . With 2 kids, it is much easier to just eat it then to find time to peel it!
