veggie skins

Are there any vegetables (organic that is) that you should not eat the skins

on? I'm wondering about beets and rutabagas? I always leave the skins on

my organic carrots.

 

Any thoughts?

I think, on a lot of things, it would be personal preference. I've

heard that most of the vitamins and minerals are either in the skin or

just under it. Then, again, others say to peel to get rid of organisms.

If you want to get B-12 you shouldn't even wash them but I don't want

to eat dirt, either. Some people do. I don't know that they actually

want to, but they eat it. So, I'd say do what you want and if you like

the peeling, eat it if it hasn't been exposed to any " cides " .

Thanks Tommie,

It is just so confusing, because some cookbooks/source books say to peel

certain things and then other don't, so I will just do trial and error!

With 2 kids, it is much easier to just eat it then to find time to peel it!

does anybody know a recipe for raw hummus?

Tiffany, I think it would boil down to, if the peeling is nasty, do

away with it. If your kids will eat it, let 'em!
