Guest guest Posted February 25, 2002 Report Share Posted February 25, 2002 * Exported from MasterCook * Waldorf Rice Salad for a Crowd Recipe By :Washington Apples 2002-02 Serving Size : 24 Preparation Time :0:00 Categories : Quantity Cooking Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 quarts cored and diced Delicious apples 1 cup pineapple juice 3 quarts cooked brown or white rice -- cooled 4 cups celery -- chopped 4 cups walnuts -- coarsely chopped 3 cups golden raisins 1 1/2 cups carrots -- finely chopped 3 cups low-fat vanilla or plain yogurt 1 1/2 cups low-fat mayonnaise 1 tablespoon salt 1 teaspoon cinnamon 1/2 teaspoon ground coriander 1.) In large bowl, toss apples with pineapple juice; drain if necessary. 2.) Stir in rice, celery, walnuts, raisins and carrots. 3.) In separate bowl, blend yogurt, mayonnaise, salt, cinnamon and coriander. 4.) Stir dressing into apple mixture. Cover and refrigerate until service. Makes 24 (1 1/4 cup) servings.
