Guest guest Posted February 28, 2002 Report Share Posted February 28, 2002 * Exported from MasterCook * Basic " Cream " Sauce for Steamed Vegetables Recipe By :Jeani-Rose Atchison Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Basic Sauce: 1 tablespoon oil* 2 tablespoons flour (millet, rice, spelt, or oat) 1 cup vegetable stock -- heated 1 tablespoon miso dash nutmeg Heat oil in heavy saucepan. Stir in flour. Whisk 1-2 minutes over low heat. Remove from heat. Add heated vegetable stock. Bring almost to a boil. Turn to low heat. Simmer until thickened. Stir in miso and nutmeg. *Oil can be omitted. Just dry-toast flour. Variation 1: Saute shiitake mushrooms and 1 chopped onion. Add to sauce. Simmer a few more minutes. Variation 2: Add 1-2 teaspoons herbs to sauce while simmering. Include combinations such as thyme, nutmeg, garlic; thyme, sage, parsley; oriander, cumin, ginger. Variation 3: 1 tablespoon peanut butter 1 onion, minced 1/4 cup orange juice Combine all ingredients. Add to basic sauce. Omit oil in basic sauce recipe. Simmer 5-8 minutes.
